Crockpot Beef Stew....


CROCKPOT BEEF STEW

(21 DAY FIX APPROVED!!!!)

Servings : 6 (1 Serving is measured with 2 Green Containers)

1 1/2 lbs Beef Stew Meat
Salt and Pepper
1/4 Cup Flour
1/2 lb Baby Carrots
1 Medium Onion (chopped)
2 lbs Red Potatoes (chopped into small cubes)
1 Tbl Olive Oil
4 Garlic Cloves (minced)
2 Cups Beef Broth
1 Tbl Dijon Mustard (NOT Honey Dijon, just the plain one :) )
1 Tbl Low Sodium Soy Sauce
1 Tbl Worcestershire Sauce
1 Tbl Honey
1 tsp Dried Rosemary
1/2 tsp Dried Thyme

DIRECTIONS :

1. Put the flour and a good amount of salt and pepper into the flour and mix together. Put
    the beef in a large bowl and sprinkle the seasoned flour on top and coat the meat. Set
    aside
2. Chop the onion. Wash the potatoes and chop into small cubes. Place carrots, chopped
    onion, cubed potatoes into the crockpot
3. In a large pan, heat the Olive Oil, add the minced garlic and and saute until almost brown
    and fragrant. Add the floured beef into the pan and brown the beef on all sides. Add the
    beef to the crockpot
4. In the same large pan, add the beef broth, mustard, low sodium soy sauce,
    worcestershire, honey, rosemary and thyme. Whisk together well over medium heat, and
    pour over the meat and vegetables once all ingredients are incorporated. Mix the meat,
    vegetables and sauce in the crockpot, put the lid on and cook on high for 4 hours, or low
    for 8 hours
5. Taste test the flavour and add salt if needed - not very much though, remember you are
    on the 21 day fix :)

  4. The picture says 1/2 red, 1 green, 1 yellow, but by servings it says 1 serving is measured with 2 green?

    1. Yes, she is saying to portion out a full serving on your plate, FILL the green container twice :)

  5. If I were to sub radishes for the potatoes, would it still count as a carb because of the flour?

  8. I’ve been using ground turkey for years. I personally don’t like the taste of ground beef. Turkey will take the flavor of any seasoning you add and it is much lighter than beef. These meatballs look fantastic. Whenever I’m making spaghetti my guys always want meatballs. Pinning!UpdateLand

  12. Breakfast for dinner is always fun with the kids and we do pizza a lot too. They are getting to be the age that I can allow them to use the cook top, it makes cooking/baking fun.

  14. WOW! This came out so delicious! I do the same thing, taking inspiration from a recipe and then changing it up. I had some left over roasted sweet potatoes so I just carmelized onions, browned the turkey in a pan, added some other vegetables, red thai chili paste, and a bit of lemongrass (along with everything you put in the recipe) and it came out amazingly delicious! My fiance was shocked because I put it together rather quickly and it was so yummy :)

  15. This recipe was super easy and had great flavor. I do agree with some of the other commenters though - this was too sweet for my taste. I'd probably use a quarter of the white sugar. Otherwise a great dish, I will definitely be making again! I think I may even add some chick peas or kale next time. :)
